Director or Campus Operations

Ms. Macat received her Bachelors of Business Administration from Angelo State University and her Masters of Business Administration from Our Lady of the Lake University. She is certified as a School Food Nutrition Specialist through the Texas Association for School Nutrition. Ms Macat has over 20 years of experience in elderly nutrition and school lunch programs with heavy emphasis on regulatory compliance.

 
Department Function

Provide leadership and organization to ensure the effective implementation of the National School Lunch Program, School Breakfast Program, and the After-school Snack Program. In addition, provide oversight of day-to-day operations and supervision of over 650 campus-based staff at 92 kitchens in SAISD. Four supervisors and four specialists are responsible for the oversight of campus operations.

Nutrition Policy Compliance

SAISD Food & Child Nutrition Services operates in accordance with Texas Department of Agriculture (TDA) and United States Department of Agriculture (USDA) guidelines. Failure to do so may result in loss of program funding.

SAISD Food & Child Nutrition operates a Provision 2 program under USDA regulations. As a Provision 2 district all students are entitled to one free Type A Lunch and one free Type A Breakfast.

SAISD Food & Child Nutrition Services provides meals under the Traditional Food Based Menu Planning option. Under this option, a reimbursable lunch as defined by USDA guidelines must include 1) 2 oz Meat/Meat Alternate, 2) ¾ cup Vegetable and/or Fruit; 3) 1 serving Grain/Bread; 4) ½ pint fluid milk.

SAISD Food & Child Nutrition Services provides meals under the Traditional Food Based Menu Planning option. Under this option, a reimbursable breakfast as defined by USDA guidelines must include 1) ½ cup juice/fruit/vegetable; 2) 1 serving Grain/Bread; 3) 1 serving Meat/Meat Alternate; and 4) ½ pint fluid milk.

Foods of Minimal Nutritional Value Federal regulations prohibit the sale of certain foods, determined to be of minimal nutritional value, in the foodservice area during meal periods. TDA has issued policy requirements under the Texas Public School Nutrition Policy at the elementary, middle school, and high school levels. (See TPSNP for each level). Failure to abide by this regulation could result in loss of funding.
