A Taste of SAISD Salsa Cook-off

Salsa ContestSan Antonio ISD students are getting their shot at being the creator of a school cafeteria menu item.

The Child Nutrition Services department held a Salsa Competition for the District’s culinary arts and nutrition program students on Tuesday, May 10. Approximately 30 students, grouped into teams, competed for the opportunity to create SAISD’s official salsa recipe. The students represented Brackenridge, Burbank, Edison, Lanier and Sam Houston high schools.

The teams were tasked with creating a recipe for a traditional salsa with a spice and heat level appropriate for students in grades kinder-12. Each school made several varieties, including creamy green jalapeño, ranch and roasted salsas. 

Jorge Garcia Navarro from Edison High School placed first in the competition among 19 entries. His salsa will be served to all schools in the district next year. See his recipe below.

This is the first year the Child Nutrition Services department held a student cooking competition. It will become an annual event with each year featuring a different menu item.

SAISD Child Nutrition Department’s Salsa

Ingredients:

1 8-oz can tomato sauce
2 jalapenos
1 white onion
Cilantro, bunch
Lemon juice from 1/2 lemon
Garlic powder
Salt

Directions:

  1. In a blender, mix tomato sauce and jalapenos until well blended.
  2. Add onion, cilantro, lemon juice. Mix.
  3. Add garlic powder and salt to taste.
  4. Serve.
